Cooking the Roux Way Experience


If you’re going to learn to cook, then it may as well be the way of a Michelin starred chef! Michel Roux, owner of the two Michelin star restaurant, Le Gavroche, has created a contemporary cookery school in London - Cactus Kitchens - and it is here that you’ll head to enjoy an amazing six hour day with one of Michel’s highly regarded head chefs, including:

Chris King
Chris is the Chef de Cuisine at the restaurant Roux at the Landau located at the prestigious Langham London hotel. Chef King worked at Le Gavroche for five years completing his apprenticeship there under the supervision of Michel Roux Jr. rising to the position of Sous Chef.

Steve Groves
Steve is the winner of Masterchef: The Professionals and has gained invaluable experience at esteemed establishments including Buckingham Palace, The Ledbury, The Greenhouse and Noma in Copenhagen. He joined the team at Michel Roux’s restaurant, Roux at Parliament Square in 2010, assuming the role of Head Chef in January 2013.

Toby Stuart
Having started his profession way back in 1997 via work experience under Gordon Ramsay at Aubergine, Stuart’s journey has seen him work on some truly outstanding stages including Buckingham Palace, Le Gavroche, The Ledbury, The Greenhouse and Norma in Copenhagen. He joined Michel Roux’s team at the Parliament Square kitchen in 2010, taking over Head Chef responsibilities in 2013.

Your venue will be set in the eaves of an old chapel that has been thoughtfully transformed into 12 individual cooking stations, with state-of-the-art Miele induction hob and ovens. There is also a large demonstration area where you can watch the magic come to life at the hands of your expert chef.

Arriving for a 09:45 start, you will be welcomed with some tea and coffee along with some delicious freshly baked pastries. You will be introduced to your chef who will be there to guide you for six glorious hours, in which you will learn the secrets and tricks of professional chefs in a relaxed, informative and fun environment.

After the demonstration session, it will be your opportunity to create some beautiful, yet accessible dishes drawn from the Roux family archive of recipes. You will break for a light lunch before returning to your cooking station to learn more skills and techniques.

At the end of your practical lessons you will be invited to take a place at the dining table to enjoy your culinary creations with a selection of wine and conversation with Michel’s head chef.
